There is a tendency of thinking that vegan food is complicated, I’m often asked: but what do you eat? People assume that removing animal products leaves you with nothing but it is quite the opposite! You will discover so many new things! These vegan recipes are quick and simple and I hope they can give you some inspiration on plant based eating or get your started!
From pasta, to meatballs, rice, burgers and fritters, here are some easy recipes to get you into vegan cooking!
Quick & Easy Vegan Recipes For Beginners
1. Roasted Pepper Pasta
This roasted red pepper pasta sauce is incredibly creamy and comforting. It is made from roasted bell peppers and it requires very basic ingredients. Served with spinach, it’s the perfect healthy and filling lunch or dinner.
2. Pasta e Fagioli
This is a great Italian classic and only requires basic cheap and staple ingredients. It comes together in less than 30 minutes and it’s the perfect weeknight cosy dinner.
3. Caramelised Banana Porridge
Porridge was one of the first things that I made vegan, as you simply swap cows milk for plant milk. This porridge is incredibly comforting and easy to make.
4. Tofu Summer rolls
These tofu summer rolls require minimal cooking and they come together super quickly! The have tons of good for you vegetables, protein from tofu and they are served with a delicious peanut butter sauce but you can serve them with a store bought asian sauce like sweet chili.
5. Red kidney beans and quinoa burgers
These veggie burgers are super easy to make and they are full of flavour! They are made using canned products like canned quinoa and red kidney beans so they require minimal cooking, just blend all the ingredients and cook the burgers on a pan.
6. Cauliflower bites
Eating cauliflower in this way is so tasty! Try these easy and crunchy cauliflower bites for a great dinner side. They require staple ingredients like flour, milk, breadcrumbs and herbs and spices.
7. Chili sin carne
Making a vegan chilli is super easy, simply swap mince for vegan mince, that can be easily found in any supermarkets, and you will have a super flavourful chilli, check out the recipe below.
8. Teriyaki tempeh and broccoli rice
Teriyaki tempeh and broccoli. This is a really simple stir fry but with lots of flavours. If you have never tried tempeh this is an easy and delicious way to cook it.
9. Spinach and basil pesto
This is a different take on a classic basil pesto and all you need is a blender! This spinach pesto pasta is truly delicious and so easy to make, it takes a few minutes to make the pesto.
10. Potato Rosti
It cannot get easier than this when making a side with potatoes, the only ingredient you need is potatoes and the rest is seasoning!
11. Pumpkin, Sweet Potato and Carrot Soup
This easy soup is the perfect comforting meal for the fall and winter. It’s full of flavour and the best on a cold day. It comes together quickly and only requires a hand blender.
