  • Soak the bread: First, place the bread in a bowl and cover it with about half of the water. Let it sit until the water is absrobed.
  • Blend the ingredients: To a blender, add almonds and garlic, and blend until ground.
  • Add the rest of the ingredients: To the blender, add bread, vinegar, olive oil, salt and pepper. Start blending then gradually add water until it reaches a creamy consistency. It should be liquid but quite thick.
  • Chill: Ajo blanco is eaten cold, so transfer the liquid to a jar, cover it and let it sit in the fridge until ready to serve.
  • Serve: Pour the soup into small bowls, and garnish with sliced seedless grapes and a drizzle of olive oil.

Ingredients
  

  • 100 g peeled almonds
  • 120 g stale bread
  • A garlic clove
  • 60 ml olive oil
  • 2 tbsp apple cider vinegar
  • 500 ml water
  • Salt to taste
  • Pepper to taste

Garnish

  • a handful seedless grapes or melon
  • olive oil

Instructions
 

  • To begin, soak the bread in water.
  • Next, place almonds and garlic in a blender and grind until they are finely chopped.
  • Then, include the soaked bread (without draining), along with olive oil, vinegar, salt, and pepper in the blender. Begin blending and slowly pour in additional water until the mixture has a liquid texture while still maintaining a thick consistency.
  • Transfer the prepared liquid into a jar, cover it, and allow it to rest in the refrigerator until it is ready to be served. It is important to note that the liquid should be served cold.
  • When you are ready to serve, pour the chilled liquid into individual bowls and garnish with olive oil and seedless grapes that have been halved, place them facing upward.
