Almond Pulp Pancakes are a great way to use up almond pulp from your homemade milk. They are super easy to make and they taste delicious!

Whenever I make homemade nut milk, whether it’s almond or oat milk, I always have a lot of pulp leftover and I never want to throw it away so I made pancakes out of it and they turned out great!
These almond pulp pancakes are vegan and wholemeal. They are healthy and perfect for everyone including kids!

INGREDIENTS
- Wholemeal flour. This type of flour is high in fibre, protein, iron and magnesium. I also really like the texture of wholemeal baked goods.
- Almond milk. Creamy and silky homemade plant-based milk
- Almond pulp. This by product of homemade nut milk is high in fibre and it has healthy fats from almonds.
- Cinnamon. Cinnamon is loaded with antioxidants and anti inflammatory properties.
- Baking powder. This is the leavening agent to make the pancakes fluffy
- Vanilla extract. It enhances and deepen the flavour of the pancakes
HOW TO MAKE THESE NUT MILK PULP PANCAKES
- Mix the dry ingredients. Mix flour with baking powder, cinnamon and a pinch of salt with a whisk.


- Add wet ingredients. Add your nut milk pulp, maple syrup, vanilla extract, oil and plant milk of choice and whisk everything together.



- Make your pancakes. Pour 1/4 of a cup into on a non stick pan for each pancakes, and cook each one for a few minutes on each sides. It’s time to flip it when bubbles start to appear and the sides look cooked.


- Serve. Serve and top with maple syrup and your favourite toppings!

- 1 Bowl
- 1 Whisk
Ingredients
- 1 cup wholemeal flour (129 g)
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- pinch of salt
- 1 cup milk (240 g)
- 1/4 cup nut milk pulp (45 g)
- 1 tsp oil
- 1 tsp maple syrup
- 1 tsp vanilla extract
Instructions
- Start by mixing flour with baking powder, cinnamon and a pinch of salt.
- Then add your nut milk pulp, maple syrup, vanilla extract, oil and plant milk and whisk everything together.
- Pour 1/4 cup for each pancakes on a non stick pan, cooking each one for a few minutes on each side.
- Serve with maple syrup and your favourite toppings
