Cauliflower never tasted so good, this creamy cauliflower pasta is a super creamy and comforting and a great way to use cauliflower! This vegetable has perfect consistency to create a creamy pasta sauce.
I was actually surprised at how good this pasta recipe turned out! It is super simple but it is so delicious and full of flavour! The toasted breadcrumbs are a great topping and really complement this pasta dish
WHAT YOU NEED
- Cauliflower
- Nutritional yeast
- Pasta
- Olive oil
- Breadcrumbs
- Salt
- Mixed herbs
STEP BY STEP INSTRUCTIONS
- Make the cauliflower sauce. Start by boiling the cauliflower florets for 5/10 minutes in boiling water. Add them to a blender with nutritional yeast, salt and herbs and blend, adding some pasta water if necessary.
- Make the toasted breadcrumbs. Toast some breadcrumbs in a pan with some olive oil until golden brown, keep stirring they could burn easily.
- Cook your pasta. Boil your pasta al dente. I used rigatoni.
- Combine everything. Add your cauliflower sauce to the the pasta, mix to combine and top with the breadcrumbs. Enjoy!

Creamy Cauliflower Pasta With Toasted Breadcrumbs
Equipment
- 1 Blender
- 2 Pots
Ingredients
- half a cauliflower
- 3 tbsp nutritional yeast
- a pinch of salt
- herbs to taste
- 1/4 cup pasta water
- 200 g pasta
- 1/2 tbsp olive oil
- 1/3 cup breadcrumbs
Instructions
- Start by boiling the cauliflower florets for 5/10 minutes in boiling water. Add them to a blender with nutritional yeast, salt and herbs and blend, adding some pasta water if necessary.
- While you cook your pasta toast some breadcrumbs in a pan with some olive oil until golden brown, keep stirring they could burn easily.
- Add your cauliflower sauce to the the pasta, mix to combine and top with the breadcrumbs. Follow for more vegan recipe!
