Creamy Roasted Red Pepper Pasta | Vegan

This roasted red pepper pasta sauce is incredibly creamy and comforting. It is made from roasted bell peppers and it requires very basic ingredients. Served with spinach, it’s the perfect healthy and filling lunch or dinner.

This creamy pasta sauce has become of on my go to recipes. It is super easy to make as you just put all the ingredients in the oven and then blend them to create a creamy pepper sauce.

This recipe is a breath of fresh air from all the typical pasta recipes. It is made with very simple ingredients that are accessible and cheap to get. Vegan food is often though of as complicated or requiring weird ingredients, and this pasta cannot be a better example of how easy it can be to make a simple and delicious vegan meal.

This roasted red pepper pasta is super indulgent and full of flavour. It is served with perfectly al dente wholemeal pasta and spinach to give it some texture.

What ingredients do you need for this simple vegan pasta?

  • Pasta of your choice
  • Bell peppers
  • Onion
  • Garlic
  • Cashews
  • Water
  • Salt and pepper
  • Mixed herbs
  • Olive oil
  • Spinach

How to make Creamy Roasted Bell Pepper Pasta (Step by Step)

  1. Cut the peppers in small pieces(3/4 cm), cut the onion roughly and peel and crush the garlic. Place in a baking tray, season with olive oil, salt and pepper and mixed herbs. Mix to combine and cook in the oven for 15 minutes at 210C or until cooked.

2. In the meantime soak the cashews in hot water and boil the pasta al dente. Keep some pasta water aside in case you need it later.

3. Once the peppers, onion and garlic are ready put everything in a blender, add cashews, plant milk and season to taste and blend until smooth. (If it helps add one pasta water)

4. When the pasta is ready, to a pan add the pasta, the sauce, cherry tomatoes and spinach, add 1 few tbsp of pasta water and let the spinach wilt, then toss everything well until creamy. Enjoy!!

  • 200 g penne pasta
  • 2 bell peppers better red and yellow
  • 1/2 red onion
  • 2 garlic cloves
  • 1/4 cup cashews (soaked in hot water)
  • salt and pepper to taste
  • 3 tbsp water
  • 1 tbsp olive oil
  • 2 tsp mixed herbs
  • 1 cup cooked spinach

Instructions

  • In the meantime soak the cashews in hot water and boil the pasta al dente (keep some pasta water aside in case you need it). Once the peppers are ready put everything in a blender, add cashews, a splash of water and season to taste and blend until smooth. (If it helps add more pasta water)
  • When the pasta is ready add it to a pan or bowl, then add thee sauce,spinach, add a few tbsp of pasta water and add spinach, if fresh let it wilt, then toss everything well until creamy. Enjoy!
