This cheese ball is so delicious and it also looks so beautiful. It’s perfect to make to share for a party or a family gathering like Christmas. It would look great as part of a vegan cheese board. Vegans and non vegans will love this!
It is easy to make, with just 9 ingredients and minimal chill time. The main ingredinet is cashews because they are high in fats and they create the perfect texture.
The method is simple and the only equipment you need is a blender and a pot. This recipe has a truffle flavour but this cheese ball is entirely customisable. Choose a more neutral oil and add your favourite spices to create a different version.

CHEESE BALL INGREDIENTS
- Cashews
- Nutritional yeast
- Cornstarch
- Truffle oil
- Lemon juice
- Garlic powder, Salt, Herbs
- Dried chives
HOW TO MAKE THIS VEGAN CHEESE BALL
- SOAK cashews, for 5 minutes in boiling water.
- BLEND all ingredients. Add cashews, nutritional yeast, cornstarch, truffle oil, lemon juice, garlic powder, salt, mixed herbs and water in a powerful blender. Blend until smooth.
- COOK on the hob. Transfer to a pot and cook on low/medium heat, stirring continuously until a paste form.
- REFRIGERATE, place in a bowl or container and refrigerate for 1 to 2 hours.
- COAT . once out of the container, cover the cheese ball with dried chives. Slice and spread on some crackers!
HOW TO SERVE THIS VEGAN CASHEW CHEESE BALL?
There are many ways to serve this delicious cashews cheese but my suggestions are something crunchy like:
- Crackers
- Apple slices
- Grissini or breadsticks
SUBSTITUTIONS YOU CAN MAKE
The two important ingredients are cashew nuts and cornstarch. These can be substituted and for the rest of the ingredients you can play with the flavours to create your own customised cheese ball by adding different spices and types of oil.
- CASHEWS – You can substitute them with macadamia nuts
- LEMON JUICE – Substitute with it apple cider vinegar
- CORNSTARCH – You can use potato starch, arrowroot powder or tapioca (double the amount) instead
- DRIED CHIVES – The coating can be substituted for another type of dried herbs or use chopped nuts, seeds or cranberries for a different texture.
HOW LONG DOES THIS CHEESE BALL LAST?
I guarantee it will not last long but you can keep in the fridge for a few days.

Easy Vegan Cheese Ball (Truffle Flavour)
Equipment
- Blender
- Pot
Ingredients
- 1 cup cashews soaked in hot water for 5 minutes
- 3 tsp nutritional yeast
- 1/3 cup water
- 4 tbsp cornstarch
- 1 tbsp truffle oil
- 1 tbsp lemon juice
- a pinch of garlic powder
- a pinch of salt
- 1 tsp mixed herbs
Instructions
- Put all ingredients except chives into a high speed blender and blend until smooth.
- Place in a pot on low/medium heat and cook stirring continuously until it becomes firmer.
- Place into a container and refrigerate for 1 to 2 hours.
- Take out of the container and cover in chives, slice and enjoy
