These easy pancakes are super easy to make and they require basic ingredients. They are super fluffy and soft and they make up the perfect indulgent breakfast!
Pancakes are one of the first things that I tried making vegan when I was experimenting with vegan cooking and I was surprised at how good they turned out without using any animal products.
This recipe is a simple pancake recipe using ingredients that you will easily have in your pantry already!
You don’t need eggs to make perfect and fluffy pancakes! Give this recipe a try and let me know what you think!
ALL YOU WILL NEED:
- Plain flour
- Plant milk
- Baking power
- Cinnamon
- Lemon juice or apple cider vinegar
- Neutral Oil

Easy Vegan Fluffy Pancakes
Equipment
- Bowl
- Pan non stick preferrably
Ingredients
- 1 cup plain flour 120 g
- 1 tbsp baking powder
- 1 tsp cinnamon
- 1 cup soy milk 250 ml
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 1/2 tbsp neutral oil
Instructions
- Mix milk and lemon juice to make “buttermilk”.
- Combine flour, cinnamon and baking power then add the buttermilk, oil and vanilla extract.
- Mix well then pour 1/4 of a cup into a non stick pan on low/medium heat and cook until bubbles form, then flip the pancake and cook for a few more minutes.
- Top with fruit and maple syrup! Enjoy!
