Easy Vegan Scallion Pancakes

Super flaky and crispy vegan scallion pancakes. They are simple to make and they taste amazing!

WHAT YOU WILL NEED

  • Plain flour
  • Salt
  • Water
  • Scallions
  • Vegetable Oil
  • Black pepper
  • Soy sauce for dipping

That’s it. These Chinese pancakes require very few ingredients but they are amazing! The dough recipe comes from the Omnivores cookbook (here)

VEGAN SCALLION PANCAKES STEP BY STEP INSTRUCTIONS

MAKE THE DOUGH. Mix flour and salt. Add hot water while mixing with chopsticks or a fork, then add the cold water and mix until it is absorbed and then mix with your hands to create a dough. Transfer to a surface, dust with flour and knead until smooth and firm, 5 minutes. Cover and let rest for 30 minutes.

PREPARE THE FILLING .Chop the scallions finely and combine flour with pepper and warm vegetable oil to create a paste.

MAKE THE PANCAKES – When the dough has rested, knead a little more. Then divide it into 6 parts. Make a ball out of each, slightly oil the surface and begin to roll it out to a rectangular shape and very thin. Flip the dough to avoid sticking.

Add some of the paste to the the top, then sprinkle the whole surface with scallions. Roll the rectangle on itself from the longest side to form a tube and pinch the sides to close it Hold it in your hands and try to squeeze out any air bubbles. Now take the tube and make a roll and seal the end. Flatten with your hands and let rest a few minutes while you make the others. Then roll it out int a thin circle.

Cook in a pan with some vegetable oil on medium/high heat for 3/5 minutes on each side until nice and golden. Serve with soy sauce or your favourite dipping sauce!

  • a pinch of salt
  • 1/2 cup boiling water
  • 1/4 cup water room temperature

  • 1 tsbp flour
  • 1 1/2 tsp black pepper
  • 5 scallions/spring onions
