Fig and Vegan Ricotta toast

Figs are in season and this toast is a great way to use figs when they’re at their peak. This fig and vegan ricotta toast  is ready in minutes and it can be an appetiser, a breakfast or a snack!

These toasts might look fancy but they are so easy to make and really quick! The crunchy pistachios and agave syrup are the perfect toppings for juicy figs and smooth vegan ricotta.

Figs are my favourite thing even this season. I get them directly from the tree and they just taste amazing! I love to have toasts as snacks, if you’re like me check out my pan con tomate recipe for a savoury toast idea!

Figs go well with so many things. If you don’t fancy making your own vegan ricotta you can use vegan yoghurt of any nut butter as the base, it will taste delicious!

What ingredients you need

  • Bread : a good quality bread that can take many toppings. Grilling it is optional but if it is soft it won’t keep all the toppings.
  • Tofu ricotta: This comes together in minutes simply using a blender, mixing firm tofu with a few ingredients. If you don’t want to do this, I suggest using a vegan cream cheese, yoghurt or a nut butter of your choice.
  • Syrup : I used agave syrup but you can use any syrup or honey alternative
  • Pistachios : these add a nice crunchy toppings but they are totally optional. You could substitute them with other nuts such as crushed hazelnuts or shredded coconut.

How to make this fig and vegan ricotta toast

This toast is really easy to make and only requires a few steps:

  • Make your tofu ricotta by blending the tofu with lemon juice, nutritional yeast, sesame seeds and a splash of water or milk, and salt and pepper to taste.
  • Toast your bread slices until nice and golden
  • Take the vegan ricotta and spread it on the bread. Wash the figs and cut them in thin slices and add them as toppings. Add some agave syrup and sprinkle some crushed pistachios on top.

Ingredients
  

  • Two slices of high quality bread
  • 100 g of tofu
  • 1 tsp lemon juice
  • 2 tbsp nutritional yeast
  • 1 tsp sesame seeds
  • a splash of water or plant milk
  • salt and pepper to taste
  • 1 tbsp agave syrup
  • 1 tbsp crushed pistachios

Instructions
 

  • Make your tofu ricotta by blending the tofu with lemon juice, nutritional yeast, sesame seeds and a splash of water or milk, and salt and pepper to taste.
  • Toast your bread slices until nice and golden
  • Spread the ricotta on the toast, wash and slice the figs then add them to the toast. Sprinkle with agave syrup and crushed pistachios
