Prepare the crispy grated tofu according to this recipe
In the meantime, prepare the glaze: In a pan, heat a small amount of oil over medium heat. Add finely chopped onions and cook until softened and caramelized, about 15 minutes. Stir in the tomato paste and cook for an additional 2 minutes to enhance its flavor.
Add soy sauce, water, vinegar, and maple syrup to the pan. Mix well and cook for 2-3 minutes until the mixture thickens into a glossy sauce. Once the tofu is ready and crispy, add it to the mixture, adding some water if necessary and mix until combined.
Assemble the tacos:
Warm the taco shells in a dry skillet or oven for a few minutes. Fill each taco with some vegan yogurt mixed with lime, the grated tofu mixture, and add your favourite garnishes, I went for pickled carrots and onions, fresh parsley and lime!
