Puy Lentils And Brown Rice Veggie Burgers

These lentils and brown rice veggie burgers are hearty, flavourful and really delicious. They have a great texture and they hold together perfectly. Perfect served in a burger bun or on their own, they’re the perfect healthy meal.

I love veggie burgers of all kinds and I love experimenting with new ingredients. This one is so easy, it requires only a few ingredients and it’s really delicious! The rice and lentils work perfectly to make a compact patty, which is something that might be a problem when making veggie burgers.

These lentils and brown rice veggie burgers are super quick if you have leftover rice and canned lentils but you can also cook them in advance for when you want to make the burger. It is delicious served in a burger bun, with lettuce, barbeque sauce and a side of oven-baked sweet potatoes as well as on it’s own!

What you will need:

  • Cooked puy lentils
  • Cooked rice
  • Sun-dried tomatoes in olive oil
  • A mix of spices: paprika, parsley, cumin
  • Olive oil
  • Salt and pepper
  • Breadcrumbs (optional)

How to make these lentils and brown rice veggie burgers:

1.Put all ingredients except breadcrumbs in a blender. (Cooked rice, lentils, spices, oil, sundried tomatoes and salt and pepper.

2.Blend slightly (it doesn’t have to be smooth)

3.Make patties with your hands

4.Coat each patty in breadcrumbs. (optional step)

5.Cook on a non-stick pan or with a little olive oil for a few minutes on each side until golden.

6. Serve alone or with burger buns
