Hearty and comforting radicchio and walnuts quiche. With the perfect crunchy crust, soft centre and topped with more walnuts for extra crunch.
This combination of flavour is a traditional Italian one, but cheese is usually added because of the bitterness of the Radicchio. In this recipe, tofu is used to create a smooth cream.
I love using tofu in quiches like this one. It’s a great way of eating it (especially if you’re not a big fan of it) and it creates the perfect texture and binds all the rest of the ingredients together. Sometimes I use it as a base but it works wonderfully like this as well!
This quiche is very simple! Even if you’ve never tried one or it seems daunting or hard, it really is not! Simply sauté the radicchio, blend all the ingredients for the tofu filling, mix it all together and you’re done!
Radicchio can be a bit bitter but the tofu together with the walnuts and nutritional yeast makes it really nice. Plus, if you love it like me you will definitely enjoy this!

What you need
- Tofu
- Plant based milk
- Walnuts (plus more for topping)
- Nutritional yeast
- Salt and pepper

- Whole meal flour
- 1 cup white flour
- 110g water
- 65g olive oil

Comforting Radicchio and Walnut Vegan Quiche | With tofu filling
Ingredients
- 200 g firm tofu
- 1/4 cup plant based milk
- 40 g walnuts plus more for topping
- 3 tbsp nutritional yeast
- Salt and pepper to taste
- 2 small head of radicchio/red lettuce chopped
- 1 small red onion
- 1 tbsp olive oil
For the crust
- 1 cup whole meal flour
- 1 cup white flour
- 110 g acqua
- 65 g olio evo
Instructions
- Pre heat oven to 190C/475F
- If making the quiche crust, mix together the flour, the add water and oil and mix well. Knead until smooth then cover and let rest while you prepare the filling.
- To make the tofu sauce: blend tofu, milk, walnuts, nutritional yeast. Blend until smooth (add some water/milk if not) then season with salt and pepper.
- In a pan saute a small red onion in a little olive oil then add finely chopped radicchio, sprinkle with some salt and let wilt. When it’s soft, turn off the heat and remove any excess water. Add the tofu sauce to the pan and mix to combine.
- Prepare the crust into a pie oven safe, makes some holes with a fork and pour the mixture in it. Spread evenly and top with some more crumbled walnuts, and season with salt and pepper.
- Bake for 30 minutes or until golden.
