A super easy meal, roasted vegetables couscous. It is full of flavour and it comes with a delicious tahini sauce. It’s perfect for a hassle free meal and perfect for meal prep!
WHAT YOU NEED
- Couscous
- Vegetable Stock
- Broccoli
- Carrots
- Red onion
- Chickpeas
- Olive oil
- Maple syrup
- Spices (turmeric, paprika, cumin, ginger powder, cinnamon)
SUBSTITUTES
- Vegetables. You can use any vegetables you have in the fridge. Just be careful with the cooking time of each one.
- Couscous. Instead you can use other grains, such as quinoa, rice, millet, bulgur, buckwheat etc.
- Spices. As with the vegetables, you can add your favourite spices.
- Tahini sauce. A super easy dressing that is a game changer
- You can also add dried fruit, raisins wold go well with this recipe!
ROASTED VEGETABLES COUSCOUS -STEP BY STEP INSTRUCTIONS
- Prepare the vegetables. Chop onion, carrots and broccoli in pieces. Drain the chickpeas. Place on a baking tray with baking paper or in a baking dish. Drizzle some olive oil on top, then add salt and the spices. Mix well then add maple syrup and mix again. Place in the oven for 25 minutes, until cooked
- In the meantime, prepare the couscous by placing it in a bowl and covering it with the stock. Cover with a lid and wait 5 minutes, the water will be absorbed and it will be ready. Keep covered so it remains warm.
- Make the sauce by mixing tahini with lemon juice and water until runny. Then plate everything, add the couscous to a bowl and add the vegetables and drizzle the tahini dressing on top!

- 150 g couscous
- 170 ml hot vegetable stock
- 1 red onion
- 1/2 broccoli
- 2 carrots
- 1 can canned chickpeas
- olive oil salt to taste
Spices
- 1 tsp turmeric
- 1 tsp paprika
- 1 tsp cumin
- 1/2 tsp ginger powder
- a pinch of cinnamon
- 1 tbsp maple syrup
Tahini dressing
- 2 tbsp tahini
- 1 tbsp lemon
- enough water to thin
Instructions
- Preheat oven to 190C
