It will not have the same texture as a cookie as it is cooked in the microwave. It is more of a hybrid between a cookie, a brownie and a cake! One thing that is for sure is that is tastes delicious! It’s soft, chocolatey and crunchy from the walnuts.
I made this a lot recently, and it’s simply the perfect treat. So easy, incredibly quick and just so yum!

For this single-serving microwave cookie cake, you will need:
- Self-raising flour
- Cocoa powder
- Sugar
- Oil
- Plant milk
See step by step Instructions – So easy!
1.Mix flour, cocoa powder and sugar in a small bowl
2. Add milk and oil
3. Mix well until the mixture becomes thick and sticky
4. Mould into a cookie shape using your hands and place in on a microwave safe plate with baking paper
5. Top with chocolate chips and walnut pieces (you can also add more them in the batter while you mix)

6. Microwave for 1.25 minutes and let it cool down for 5 to 10 minutes and enjoy!
Substitutions
- Self- raising flour: replace with all purpose flour and add 1/4 tsp of baking powder
- Sugar: replace with any other sweetener
- Oil: for an oil-free version, you could try substituting it for apple sauce but I cannot guarantee the same texture
- Cocoa powder: You make it a chocolate chip cookie by avoiding cocoa powder. I recommend adding 1/2 tsp vanilla extract for extra flavour.
