This traditional Spanish cold soup is super refreshing and the perfect dish for hot weather. It’s made of raw vegetables that are blended into a creamy soup.
The traditional version is with tomatoes which are the main ingredient and peppers, cucumbers, onion and stale bread. There are although many versions, such as gazpacho where the main ingredient is cucumber, cherry, watermelon etc
Gazpacho is typical of the south of Spain, more specifically Andalucía but you’ll find it all over the country.
It’s made of tomatoes, peppers, cucumbers, onion, stale bread and they are seasoned with olive oil, apple cider vinegar and salt.
STEP BY STEP INSTRUCTIONS WITH PICTURES
- Add tomatoes, cucumber, red pepper, onion and stale bread to a bowl. Add olive oil, apple cider vinegar and salt and mix to combine. Put the bowl in the fridge for 30 minutes to one hour (optional). like to do this if I have time because in this way the ingredients absorbs the flavours more, but you can skip this step.
- Add the ingredients to a blender and blend until smooth, add some cold water if necessary, depending on your preferred consistency.
- Serve and top with a drizzle of olive oil and some crunchy croutons.

Spanish Gazpacho Soup
Ingredients
- 1/2 red pepper chopped
- 1/2 cucumber chopped
- 500 g tomatoes chopped
- 60 g stale bread chopped
- 1/4 red onion chopped
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- A pinch of salt
- Cold water to blend depending on the consistency
Garnish
- 2 tsp olive oil
- 2 tbsp croutons
Instructions
- Add tomatoes, cucumber, red pepper, onion and stale bread to a bowl. Add olive oil, apple cider vinegar and salt and mix to combine. Put the bowl in the fridge for 30 minutes to one hour (optional)
