Sticky Teriyaki Tempeh and Broccoli Stir Fry

Teriyaki tempeh and broccoli. This is a simple stir fry but with lots of flavours. If you have never tried tempeh this is an easy and delicious way to cook it.

I love tempeh. It is a great source of protein, as well as other various minerals and vitamins. It provides protein, fiber, irons and potassium

What is tempeh and how is it different from tofu?

If you don’t know what tempeh is, it is made from fermented soybeans. It is similar to tofu, as they are both processed soy products, but tofu is made from coagulated soy milk into solid white blocks and tempeh is made from cooking and fermenting soybeans. Tempeh has a firmer texture, is chewier and has an earthy, nutty and more district and stronger taste.

Cooking tempeh

In a lot of recipes, tempeh needs to marinated. This recipe doesn’t require marinating and makes the perfect quick lunch or dinner. Both the tempeh and broccoli are coated in a delicious dense sauce made with teiryaki sauce.

The teriyaki sauce is really flavorful, everything paired with some wholemeal rice it’s perfect.

Sticky teriyaki tempeh and broccoli

What you need for this recipe:

  • Plain tempeh
  • Broccoli
  • Olive/sesame oil
  • Maple syrup
  • Triyaki sauce
  • Cornflour

This recipe goes really well with rice but it can be eaten on it own.

Step by step method

First chop the tempeh in small cubes and the broccoli in small pieces. Cook both in separate pans, you can do it with some oil but also with water or with nothing with a good non-stick pan, since they’ll be covered in the sauce. Cook the tempeh on all sides until golden, for a few minutes each.

In the meantime make the sauce: mix oil, teriyaki sauce and maple syrup and mix. Then add cornstarch and mix until there are no lumps. Then add water to thin.

When the broccoli and tempeh are done (broccoli is soft or how you prefer it and tempeh is golden) set aside and take one of the pans you used, set it on low heat and pour the sauce in it. Stir constantly until it changes consistency and becomes dense. When it reaches a consistency you like, take it off the heat and add tempeh and broccoli. Stir to coat and serve over rice and sprinkle with black sesame seeds!

Ingredients
  

  • 1 broccoli head and part of the stalk
  • 1 block of plain tempeh
  • 1 tbsp oil sesame/olive oil
  • 1 tbsp maple syrup
  • 2 tbsp teriyaki sauce can substitute with soy sauce
  • 1 tbsp cornflour can substitute with flour
  • 3/4 tbsp water to thin

To serve

  • Whole meal basmati rice
