Sun-dried tomato pasta sauce | Vegan and super creamy

This sun-dried tomato pasta is creamy, full of flavour and so easy to make. I absolutely love pasta over anything else and a good pasta sauce makes it even more delicious.

I love coming up with new pasta recipes, there are so many different ways of having it! I’m such a fan of sun-dried tomatoes and when I made this one I knew I had to share it. It is so easy, requires few and accessible ingredients and it is so delicious!

This pasta recipe is:

  • Vegan
  • Can be gluten-free
  • Incredibly creamy
  • Bursting with flavour

I’ve been loving adding cashews to pasta sauces as they make the most perfect creamy sauce. You do not need a powerful blender for this recipe, the cashews are easily blended after being soaked in boiling water

For this recipe, you will need:

  • Pasta
  • Sun-dried tomatoes
  • Cashews
  • Onion, carrot, garlic clove, celery stalk (soffritto)
  • Tomato paste
  • Oregano
  • Salt and pepper
  • Fresh spinach

Step by step Instructions

1. In a pan, sauté onion, garlic, carrot and celery in a little olive oil and water, until soft

2.Add tomato paste and mix to combine
3. In the meantime, soak the cashews in boiling water.

4.Transfer the vegetable mix to a blender and add the rest of the ingredients and blend until smooth.

5.Cook the pasta al dente then mix with the sauce in a pan and add spinach to wilt. Enjoy!
