Vegan Banana Pancake Bites (Wholemeal)

These Vegan Banana Pancake Bites are the cutest and most delicious mini pancakes perfect for a weekend breakfast! They are vegan, with no eggs or diary and they are so fun to make!

Vegan Banana Pancake Bites

I saw these types of pancakes all over my Instagram so I decided to give them a go! I made them vegan and I used wholemeal flour and they turned out great!

WHAT ARE BANANA PANCAKE BITES?

Banana pancake bites are bite sized stuffed pancakes made with banana slices that are dipped in pancake batter. These create super tasty and delicious mini pancakes bites. The banana cooks with the pancakes and it literally melts in your mouth!

WHAT YOU WILL NEED – 5 INGREDIENTS

  • Wholemeal flour
  • Chia seeds
  • Baking powder
  • Plant milk of choice
  • Banana

SUBSTITUTES

  • Flour. You can use any other flour that is not gluten free or you can use a mix of a normal flour and a gluten free flour (for example half wholemeal, half oat flour). If the batter is too liquid just add more flour until it reachers the consistency shown in the pictures (below)
  • Chia seeds. These help the batter stick together better. You can use any type of chia seed or substitute with flax seeds
  • Baking powder – You can use baking soda but mix it with some lemon juice or apple cider vinegar first
  • Banana – you can try with other similar shaped fruit that will hold together, like apple slices, strawberries, but fruit like blueberries.
  • Plant milk- Here I have used soy milk but any other will do, you can also use water

STEP BY STEP INSTRUCTIONS

  • Prepare the batter. Mix flour with baking powder and chia seeds. Then add milk and whisk until a smooth batter forms. It should be relatively thick.
  • Make the bites. Slice the banana, then dip each piece (one at a time) into the batter with a fork and let the excess batter come off.
  • Cook the pancake bites. Place the pieces on an oiled or good non stick pan. Cook for a few minutes then flip and repeat. These will take less time than regular pancakes
  • Garnish. I served them with blueberries, peanut butter and syrup! So tasty!

Ingredients
  

  • 1 cup wholemeal flour 112 g
  • 2 tsp chia seeds
  • 1/2 tsp baking powder
  • 1 cup soy milk or milk of choice 236 ml
  • 2 medium banana

Instructions
 

  • Mix flour with baking powder and chia seeds. Then add milk and whisk until a smooth batter forms.
  • Slice the bananas, then dip each piece (one at a time) into the batter with a fork and place in an oiled or good non stick pan. Cook for a few minutes then flip and repeat.
  • Serve them with your favourite toppings! I used fresh blueberries, peanut butter and maple syrup! So tasty!
