These Vegan chickpea and sun-dried tomato burgers are the perfect vegan burger. They’re easy, require a few ingredients and are rich in plant-based protein.
I love making new veggie burgers, they’re so versatile. They’re easy, quick and a good way to eat legumes! I loved this one, the sun-dried tomatoes give it a really unique taste and makes the burgers less dry without having to add oil.
This burger uses chickpeas as a base, that create the perfect smooth texture. In fact, this burger isn’t crumbly and has a nice savoury taste thanks to the sun- dried tomatoes and fresh herbs.
These burgers come together in no time and if you don’t know what to do with a can of chickpeas this is your sign! All pantry staples except some fresh herbs which you can easily substitute, dinner or lunch has never been this easy!

For this recipe you will need:
- Chickpeas
- Onion
- Garlic
- Sun-dried cherry tomatoes in oil
- Rolled oats
- Fresh parsley
- Ground thyme
- Salt and pepper
- Your favourite burger toppings
Vegan chickpea and sun-dried tomato burgers| easy and quick
Ingredients
- 1 can chickpeas 240 g
- 1 small red onion
- 1 tsp minced garlic/ garlic herbs
- 8/9 sun-dried cherry tomatoes
- 1/2 cup rolled oats
- 1/2 cup fresh parsley
- 1 tsp ground thyme
- Salt and pepper
Toppings
- Whole meal burger buns
- Lettuce
- Red onions
- Cherry tomatoes/heirloom tomatoes
- Vegan BBQ sauce, Ketchup, vegan mayo, guacamole
Instructions
- Combine all burger ingredients in a blender. Blend (it doesn’t have to be completely smooth) Then form patties with your hands.
- Fry in a little olive oil for a few minutes on each side, until golden brown. Assemble the burger with the buns and your favorite ingredients.
