This vegan poké bowl is made with crispy tofu, coated in a sesame and ginger soy sauce paired with sushi rice, avocado, edamame, red cabbage, carrot and radish. This meal is the rainbow in a bowl and it is simple, healthy and customisable!
I’ve always loved poké bowls because they are healthy, full of fresh vegetables and you can customise them to your liking. Making it vegan is very straightforward and we only need to substitute the raw fish that goes in the traditional ones for something else, in this case tofu!
Poké bowls are the perfect quick meal as they come together very quickly and most of the ingredients do not need to be cooked. In this recipe, we will only be cooking the tofu, which takes only a few minutes on the pan.

The best thing about poké bowls is that you can play around with the fresh ingredients and can use anything you have in the fridge!
For this bowl, I used:
- Tofu
- Cornstarch or flour
- Sesame oil
- Soy sauce
- Rice vinegar
- Maple syrup
- Fresh or grated ginger
- Sushi rice or regular rice
- Carrot
- Edamame
- Avocado
- Radishes
- Red cabbage
Step by step Instructions
- First, cook the rice according to package instructions. For the sushi rice I used, you need to wash it and soak it thoroughly until the water becomes clear. This helps get rid of the excess starch and will give the rice a light texture.
- Prepare all the raw vegetables by dicing the avocado, thinly peeling the carrot, slicing the radishes and the cabbage.
- Remove excess water from the tofu, you can press it for 15 minutes or so but it is not necessary. Then dice it and toss it in cornstarch with salt and pepper. Heat up a pan with some sesame oil, then add the tofu. Cook until golden brown then add 2/3 tbsp of the sauce (the rest will be used as dressing). Assemble the bowl with the rest of the ingredients and add the tofu. Cover with the rest of the ingredients. Enjoy!

Vegan Poké Bowl with Sesame and Ginger Tofu
Ingredients
Tofu
- 1 pack to tofu 280g
- 3 tbsp cornstarch/cornflour or ap flour
- Salt and pepper to taste
- Sesame oil to taste
Sauce
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tsp maple syrup
- 1 tsp fresh ginger
Bowl
- 2 portions sushi rice (120g)
- 1 medium carrot, thinly peeled
- 1 cup edamame
- Half an avocado, diced
- 5/7 radishes, thinly sliced
- 1/4 red cabbage
