Vegan Swiss Geschnetzeltes from Zurich

Creamy Seitan strips in a creamy onion sauce and Rösti fritters. Geschnetzeltes is a Swiss dish from Zürich. It is traditionally made with recipe veal strips and cream. I made it vegan using Seitan and trying to recreate the same taste. It’s super rich, comforting and simple to make!

Vegan Zürcher Geschnetzeltes

I made this recipe with my grandma who is Swiss and we recreated it as similar to the original as possible. I turned out super delicious and just I remember it!

WHAT YOU NEED

  • Seitan or another meat substitute like soy curls, tofu etc
  • For the coating: flour, salt and pepper
  • Olive oil

For the sauce:

  • Soy cream
  • Soy milk
  • White onion
  • Bay leaves
  • Apple cider vinegar
  • Red wine
  • Cloves

STEP BY STEP INSTRUCTIONS

  • To a cooking pot add the onion, bay leaves, apple cider vinegar, red wine, cloves, salt and freshly ground pepper. Boil until the liquids evaporate.  Remove the bay leaves.
  • Cut the Seitan into thin strips and coat in flour. Heat up some olive oil in a pan then add the seitan to it and cook for 5/10 minutes. 
  • Add the onion mix, mix to combine and add the soy cream and milk and cook for 5 minutes. If it becomes too dense add more water and continue cooking. Now it’s ready to be served. I served it with some Rösti fritters, but you can use rice as well.

SUBSTITUTES FOR THIS RECIPE

  • Seitan, I used Seitan because it’s one of my favourite ways to replicate a meaty texture. You can use anything you like though, like soy curls, tofu, tempeh or even mushrooms!
  • Soy cream, any type of vegan cream is fine for this recipe, you can also only use milk but it won’t be as rich and that is the point of this recipe

Vegan Zürcher Geschnetzeltes

A traditional Swiss meat dish from Zurich made vegan using Seitan and vegan cream.

Ingredients
  

"Meat"

  • 500 g seitan
  • 1/2 cup flour of choice
  • Salt and pepper
  • 3/4 tbsp olive oil

Sauce

  • 1 white onion finely chopped
  • 2 bay leaves
  • 1/2 cup + 1 tbsp apple cider vinegar
  • 1/2 cup red wine
  • 5 cloves
  • Salt to taste
  • Freshly ground pepper to taste
  • 150 ml soy cream
  • 1/2 cup soy milk
  • water in case it becomes dry

To serve

  • Potato Rösti grated potato seasoned with salt and pepper cooked in a pan with olive oil
