This vegan tofu sandwich features pan fried tofu, vegan pesto, sundried tomatoes and romesco sauce to create a super delicious and healthy vegan sandwich perfect for a packed meal or an easy lunch or dinner.
Crispy toasted bread, vegan pesto, crispy flavourful tofu, and romesco sauce. This quick and easy tofu sandwich was so delicious I had to share it! It’s super easy to make and customizable and it’s ready in 10 minutes!
The only cooking required for this sandwich is pan frying the tofu and soaking the sun-dried tomatoes if they are dry.
If you don’t particulalrly like tofu give this sandwich a try and you might change your mind!
INGREDIENTS
- Wholemeal bread. I used fresh wholemeal bread toasted to make it nice and crunchy. I use wholemeal but any bread will be great for this recipe.
- Tofu. Tofu is a soy product and it is a great source of protein, there are 16 grams of protein in 200 g of tofu, which is used for this recipe. Use extra firm tofu.
- Pesto. I used my vegan kale pesto recipe but any homemade or storebought pesto will be great.
- Sun-dried tomatoes. I used dry sun-dried tomatoes soaked to make them soft. You can use sun-dried tomatoes that come in a jar with oil as well as fresh tomatoes.
- Romesco sauce. I have discovered this recently and I am obsessed. If you don’t have it try another sauce, such as Chimichurri, hummus, salsa, mayo, etc.
HOW TO MAKE THIS TOFU SANDWICH
- Press your tofu to remove excess water. Then cut it into long slices. In a bowl or plate mix cornstarch with salt, pepper, paprika, garlic powder, and mixed herbs.
- Then coat the tofu in it well on all sides.
- Heat up some olive oil in a pan and fry the tofu on both sides for a few minutes until golden.
- Toast your bread, spread pesto on one side, then add the tofu and sundried tomatoes. Spread romesco sauce on the other side. Cut in two halves, enjoy!
There you have it, so simple, but such a falvourful sandwich!

- 1/2 cup cornstarch
- seasoning: paprika, garlic powder, mixed herbs, salt, pepper
- olive oil to taste for frying
- 4 slices of bread
- 3 tbsp vegan pesto
- 8 sun-dried tomatoes previously soaked or in oil
- 3 tbsp romesco sauce or hummus or any sauce
