Start by preheating your oven to 190°C (375°F) (static)
Take your yellow apple and slice it in half. Carefully scoop out the core and then most of the flesh to create a hollow in each half. Chop the removed apple flesh into small pieces and set aside.
In a bowl, combine the chopped apple flesh with oats, milk, and a generous sprinkle of cinnamon. Stir everything together until well mixed.
Spoon the oat mixture back into the hollowed-out apple halves. Pack it in gently, ensuring the mixture is evenly distributed.
Place the filled apple halves on a baking tray. Bake in the preheated oven for 20 minutes, or until the apples are tender and the filling is golden. Turn the oven to grill for the last 5 minutes to get a nice char. Keep an eye on them.
Remove the baked apples from the oven and let them cool slightly. Top each half with a dollop of yogurt, a drizzle of agave syrup, more cinnamon and a sprinkle of chopped walnuts for a nice contrast in texture.
