Sauté onion in a little olive oil for a few minutes, then add chopped red bell pepper and spices and herbs ( add more chili if you like it spicy). Mix to combine the add tomato paste, canned tomatoes and vegetable stock. Cover and cook for 10 minutes, then add vegan mince and red kidney beans and cook for 5-8 minutes (depending on the cook time of the mince). When its done add corn, salt and pepper to taste and mix to combine. Serve over rice and top with fresh parsley and chili flakes.
