Easy Vegan Fluffy Pancakes

  • Pan non stick preferrably

Ingredients
  

  • 1 cup plain flour 120 g
  • 1 tbsp baking powder
  • 1 tsp cinnamon
  • 1 cup soy milk 250 ml
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1/2 tbsp neutral oil

Instructions
 

  • Mix milk and lemon juice to make “buttermilk”.
  • Combine flour, cinnamon and baking power then add the buttermilk, oil and vanilla extract.
  • Mix well then pour 1/4 of a cup into a non stick pan on low/medium heat and cook until bubbles form, then flip the pancake and cook for a few more minutes.
  • Top with fruit and maple syrup! Enjoy!
