Grated Tofu Tacos

Delicious tacos made with silken tofu and a soy sauce tomato glaze

Ingredients
  

Tofu Glaze

  • 1 tbsp neutral oil
  • 2 white onions
  • 4 tbsp tomato paste
  • 2 tbsp soy sauce
  • 2 tbsp water
  • 1/2 tsp apple cider or white vinegar
  • 1/2 tsp maple syrup

Garnish

  • pickled onions and carrots
  • fresh parlsey
  • lime
  • greek style vegan yogurt

Instructions
 

Tofu Glaze

  • Make the crispy tofu (click the link in the ingredients)
  • In the meantime in a pan, heat 1 tbsp of oil over medium heat. Add 2 finely chopped onions and cook until softened and caramelized, about 15 minutes. Stir 4 tbsp tomato paste and cook for an additional 2 minutes to enhance its flavor.
  • Add 2 tbsp soy sauce, 2 tbsp water, 1/2 tsp apple cider or white vinegar, and 1/2 tsp maple syrup to the pan. Mix well and cook for 2-3 minutes until the mixture thickens into a glossy sauce. Once the tofu is ready and crispy, add it to the mixture, adding some water if necessary and mix until combined.

Assemble the tacos

  • Warm the taco shells in a dry skillet or oven for a few minutes.
  • Fill each taco with some vegan yogurt mixed with some lime juice, the grated tofu mixture, and add your favourite garnishes, I went for pickled carrots and onions, fresh parsley and lime
