Ingredients

  • 700 g ready made pizza dough 24 oz
  • 30 g Fresh rosemary 1 oz
  • Salt
  • Extra virgin olive oil

Instructions

  • Preheat your oven to 180°C (375°F)
  • Divide the dough into two equal portions. On a floured surface, roll out one portion of the dough into a rectangle shape, about 0.5 cm/0.2 inch thick.
  • Generously brush the surface of the rolled-out dough with olive oil. Sprinkle the chopped rosemary evenly over the top, followed by the salt. Flip the dough over and repeat the process on the other side.
  • Repeat these steps for the second portion of dough.
  • Using a sharp knife or a pizza cutter, slice the seasoned dough into thick strips. Each strip should be about 4 cm wide and as long as the rolled-out dough.
  • Take the first strip and roll it tightly onto itself to form a small coil. Place this coil at the end of the next strip and roll it up, continuing to expand the coil. Once the spiral becomes larger, transfer it to a baking tray lined with parchment paper. Lay the spiral flat and continue adding strips, rolling and attaching them as you go. Pinch the ends of each strip to ensure they stay securely attached.
  • Brush the top of the completed spiral with an additional layer of olive oil. This step ensures the top bakes to a beautiful golden-brown color.
  • Bake the spiral for 30 minutes, uncovered. Then, cover the spiral loosely with a piece of parchment paper to prevent over-browning, and bake for an additional 5-10 minutes. Check the inner rolls with a toothpick to ensure they are cooked through. The dough should be golden but not too golden brown as it will result too dry.
  • Remove the spiral from the oven and let it cool slightly before serving. Place it on a serving platter and enjoy tearing apart the flavorful, aromatic layers! Serve it as is or with a dipping sauce like marinara.
