A super easy meal, couscous with roasted vegetables. It is full of flavour and it comes with a delicious tahini sauce. It's perfect for a hassle free meal and perfect for meal prep!
Chop onion, carrots and broccoli in pieces. Drain the chickpeas. Place on a baking tray with baking paper or in a baking dish. Drizzle some olive oil on top, then add salt and the spices. Mix well then add maple syrup and mix again.
Place in the oven for 25 minutes, until cooked
In the meantime, prepare the cous cous by placing it in a bowl and covering it with the stock. Cover with a lid and wait 5 mintues, the water will be absorbed and it will be ready. Keep covered so it remains warm
Make the sauce by mixing tahini with lemon juice and water until runny.
Then plate everything, add the cous cous to a bowl and add the vegetables and drizzle the tahini dressing on top!
