Smashed Peas On Toast (Vegan)

Ingredients
  

  • 1 cup frozen peas
  • 1 tsp tahini
  • Juice of half a small lemon
  • 1 tbsp fresh parsley
  • Salt and pepper
  • 1 tbsp black sesame seeds
  • 2 slices of sourdough bread
  • 1 tbsp olive oil

Instructions
 

  • Toss 1 cup of frozen peas into boiling water and let them cook for about 2-3 minutes. You want them just tender but still bright green. Drain and rinse with cold water to stop the cooking.
  • In a bowl, add the cooked peas and mash them with a potato masher or fork. then add in the tahini, a squeeze of half a small lemon (adjust to taste), extra virgin olive oil, fresh parsley, and a sprinkle of salt and pepper. Mash it all together with a fork until it’s chunky but spreadable.
  • Toast the bread – Grab your favorite bread and toast it to golden perfection. This mixture is enough for 2 slices
  • Spread the mashed peas generously over your toast. Finish with a sprinkle of olive oil, a crack of black pepper and some sesame seeds.
