Sun-dried tomato hummus | Creamy and easy dip

A super delicious hummus variation made with sun-dried tomatoes

Ingredients
  

  • 240 g canned chickpeas 1 can
  • 1/3 cup sun-dried tomatoes in oil plus more for topping
  • 2 tbsp tahini
  • 2 tbsp aquafaba from the chickpeas
  • Juice of 1 small lemon
  • salt and pepper to taste
  • a few ice cubes
  • 2 tbsp olive oil for topping
  • black sesame seeds

Instructions
 

  • Rinse the chickpeas but keep some of the water from the can (2 Tbsp)
  • Add the chickpeas to a blender with the rest of the ingredients and blend until smooth.
  • Top with more sun-dried tomatoes, olive oil and some black sesame seeds
