Sun-dried tomato hummus | Creamy and easy dip
A super delicious hummus variation made with sun-dried tomatoes
- 240 g canned chickpeas 1 can
- 1/3 cup sun-dried tomatoes in oil plus more for topping
- 2 tbsp tahini
- 2 tbsp aquafaba from the chickpeas
- Juice of 1 small lemon
- salt and pepper to taste
- a few ice cubes
- 2 tbsp olive oil for topping
- black sesame seeds
Rinse the chickpeas but keep some of the water from the can (2 Tbsp)
Add the chickpeas to a blender with the rest of the ingredients and blend until smooth.
Top with more sun-dried tomatoes, olive oil and some black sesame seeds
