Vegan chickpea and sun-dried tomato burgers| easy and quick
easy, quick chickpea burgers and a good way to eat legumes!
- 1 can chickpeas 240 g
- 1 small red onion
- 1 tsp minced garlic/ garlic herbs
- 8/9 sun-dried cherry tomatoes
- 1/2 cup rolled oats
- 1/2 cup fresh parsley
- 1 tsp ground thyme
- Salt and pepper
Toppings
- Whole meal burger buns
- Lettuce
- Red onions
- Cherry tomatoes/heirloom tomatoes
- Vegan BBQ sauce, Ketchup, vegan mayo, guacamole
Combine all burger ingredients in a blender. Blend (it doesn’t have to be completely smooth) Then form patties with your hands.
Fry in a little olive oil for a few minutes on each side, until golden brown. Assemble the burger with the buns and your favorite ingredients.
